Eggplant Parmesan

I have eaten Eggplant Parmesan 2 times in my life. The first time a neighbour made it for me and I politely choked it down. The second time was when Mark and I were in Positano we stayed at a little B&B with amazing views of the Amalfi Coast called Momma Rosa. Upon request “momma Rosa” will make dinner for you. She takes no orders from anyone, what she makes for the family that night is what you get for dinner… I was less than impressed to discover it was… you guessed it… EGGPLANT PARMESAN.  Again, I was going to eat it to be polite but I was not happy until I tasted it!! Mark and I devoured it. It was one of the best meals we had in Italy and we had some amazing meals there!! One of the many things we have learned from our travels in Europe is that fresh quality ingredients are essential to good food… So I was determined to get some lovely eggplants!  I went to Safeway and they had 2 VERY sad eggplants, they were pitted, spongy and dull. I thought, oh here we go, our usual 3 stores before we find the 1,  usually super easy ingredient to find… BUT I did something no man (ahem Mark)would ever think of doing I asked for help and lo and behold the very kind young man in the produce department brought out a box full of beautiful eggplants for me to choose from!! Other than the fact that we have wanted to try and replicate the flavours of Momma Rosa, another reason we opted for this recipe was we want to try and challenge ourselves to have a night or two a week with no meat.  Probably not the healthiest choice but anything layered in cheese and a spicy Arabata sauce is a yummy choice.  Recipe #4 down 102 to go!! We will move to another region soon I promise 😂. PS, Mark has a really sore back… the last pic is what my kitchen looks like when mark doesn’t clean up after me 😂
